Vegan Adzuki Bean Sprouted Patties with Tomato Sauce

Soaking the Seeds: 

1 cup adzuki seeds soaked for 12 hours before making patties. 

Ingredients for the Patties:

  • 1 cup adzuki beans , soaked for 12 hours rinsed and drained well.  
  • 1 medium onion diced
  • 1 medium carrot cut into 4 pieces
  • 1/2 cup basil
  • 1/2 cup pecans
  • 1/4 cup natural oats
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper

for the sauce:

  • 400g crushed tomatoes
  • 1 small onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 1/4 cup basil, coarsely chopped
  • 1/2 cup water
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions:

  1. Preheat oven to 180 degrees and prepare a large oven tray lined with baking paper.
  2. In a food processor, place all the pattie ingredients- adzuki beans, onion, carrot, basil, pecans, oats, dried oregano, salt and pepper. Blitz until well mixed together. (see in picture)
  3. Using clean hands, make the patties about 5 cm diameter. Place on the baking tray and bake for 15 minutes. 
  4. Meanwhile in a wide pan heat olive oil, add finely chopped onion and saute for 2-3 minutes while stirring. Add chopped garlic cloves and cook for another minute. Add crushed tomatoes, water, basil leaves, salt and pepper. Bring to the boil, cover and cook on low heat for 10 minutes. For more sauce to go with your meatballs you can add another 200g crushed tomatoes and 1/2 cup water.
  5. Carefully add the baked patties to the cooked sauce and cook for a further 5 minutes, and no longer than that. Make sure the sauce is at a simmer not boiling when adding the patties. 
  6.  Ready to serve.
