Sprouted Lentil Curry & Toasted Crunchy Mix Topping

First Up:
You will need to sprout 1/2 cup of lentil seeds 2 days before making this recipe. I used a combination of our Brown Lentil & Green Blonde Lentil seeds for this recipe. Crunchy Mix can be purchased for a number of our fresh sprout stockist or sprout 1/4 cup of crunchy mix seeds 3-4 days before. Â

Curry Ingredients:
- 1 Tbsp oil
- 1 brown onion, diced finely
- 1 Tbsp fresh ginger grated
- 4 tsp mild curry powder
- 2 cups of broccoli and carrot diced
- 1 400gm tin of tomatoes crushed
- 1 400gm tin coconut milk
- 150gm baby spinach
- 1 small lemon
- Salt & Pepper
- Rice or quinoaÂ
Toasted Crunchy Ingredients:
- 20gm Butter
- 2 cloves garlic crushed
- 120gm Crunchy Sprouted MixÂ
Method:
- Add oil to a large and deep frying pan, turn heat on low.
- Once the pan is hot, sauté onions, garlic and ginger for five minutes.Â
- Next add curry power, carrot and broccoli. Sauté veggies for two minutes.
- Add the tinned tomatoes, coconut milk and mix well. Bring to boil, then reduce heat to low, simmer for 15 minutes. Stirring occasionally.Â
- In a small pot melt butter and add in crushed garlic, once the butter is bubble reduce heat to low and add in crunchy sprout mix. Sauté for 5 to 10 minutes depending on the crunchiness of the mix you desire. When ready set aside to cool.Â
- Add lentils to the curry mixture along with the spinach, mix and then simmer for another 5 minutes.
- Add the juice of 1/2 lemon and season with salt and pepper, mix well and taste test adjust with extra lemon or salt if needed.
- Serve in bowls with rice or quinoa, topped off with coconut or natural yoghurt, sprinkled with toasted crunchy mix on top and a slice of lemon. Enjoy!
Serving Size:
- 4 adults
 Serving Suggestion:
This curry is wonderful with jasmine rice or quinoa. You could add tofu or protein like chicken, just add these in at step 4.Â
