Sprouted Chickpea Cassoulet
Ingredients:
- 120gm sprouted chickpea
- 400g tin chopped tomatoes
- 2 tsp chopped fresh thyme
- 1 large handful spinach
- 1/4 packet spaghetti noodlesÂ
- 1/2 cup grated cheese
- 1 medium onion diced
- 3 cloves garlic
- 1/2 tsp paprika
- chopped bacon (optional)
- salt & pepperÂ
Method:
Preheat oven to 180 degrees.
- Cook pasta al dente and drain
- Sauté onion, garlic, thyme and paprika until onion soft
- Add sprouted chickpeas and tomatoes, season with salt and pepper. Simmer approximately 15 mins. Add a little water if needed to keep moist.
- Place pasta in a casserole dish, add chickpea/tomato mixture, bacon (optional), spinach and cheese. Toss until well mixed.Â
- Cover and bake approximately 20 minutes.
- Serve with extra grated cheese and fresh thyme
