Spicy Coconut Noodles with Alfalfa Sprouts

This great little recipe I found is so very simple and packs a punch of spice and flavour. The Alfalfa gives a wonderful crunch with the toasted coconut 🥥. Give it a try I say 😉

Total time to make 20 minutes, serve 4, dietary vegetarian 🌱.
Recipe ingredients:
  • 400gm fettuccine
  • 420ml coconut milk 🥛
  • 3tbsp tomato paste
  • 1tbsp chili sauce (your choice)🌶️
  • 100gm Sprouted Alfalfa 🌱
  • 1/2 cup coconut flakes, toasted🥥
1. Cook pasta according to the package directions, drain and set aside.
2. Put coconut milk, tomato paste, chili sauce and salt to season into a medium pot and give it a good whisk. Bring to the boil, reduce heat and simmer for 2-3 minutes.
3. Stir in the drained noodles and toss. Divided the noodles among individual bowls. Top with alfalfa and toasted coconut flakes. Now ready to serve 🥰
Tips: save some of your pasta water to helps separate your noodles when mixing with sauce. Can be put into a large bowl with toppings and served that way.
