Marinated Mushrooms & Blue Pea Sprouts

INGREDIENTS:

  • 6-8 button mushrooms
  • A small handful of fresh mint
  • 120gm Wright Sprouts Blue Pea sprouts
  • 2 Tbsp Balsamic Vinegar
  • 1 Tbsp Flaxseed oil or Olive oil

METHOD:

Slice mushrooms thinly, place in a bowl and marinate in Balsamic vinegar for 1 hour.

Chop mint roughly, mix with marinated mushrooms and blue pea sprouts in a bowl, pour over the oil and mix well.

Serve either chilled or gently warm in the oven for 20 minutes on 50 degrees celsius.

Variation: Add a packet of Whero Peas and some chopped feta cheese.
