FETA AVOCADO SPREAD & ALFALFA
INGREDIENTS:
- 1 avocado cubed
- 2 spring onions finely sliced
- 25-30gm feta cubed
- 1 lime juice of
- 1/2 cup curly kale
- Himalayan salt
- Wright Sprouts alfalfa sprouts
METHOD:
Wash, de-stalk and very finely chop the kale, place in bowl with cubed feta and avocado flesh. Add spring onions and lime juice, using a fork mash the ingredients to mix through and season. This is great left a little chunky but you can if you prefer a smoother spread use your blender on pulse to combine.
This spread can be used in many ways, it is great on crackers, crumpets, breads and wraps. Makes a base for a delicious omelette filling.
