Chickpea, Blue Pea Sausage Casserole


  • 120g Chickpea Sprouts
  • 120g Blue Pea Sprouts
  • 1 Tbsp Olive Oil
  • 1 Large Red Onion
  • 2 Cloves Garlic
  • 1 tsp Ground Cumin
  • 5 Sausages ( Your Choice)
  • 400g Can Chopped Tomatoes
  • Salt & Ground Black Pepper
  • Chopped Parsley (Garnish)


Heat oil in a large pan, add onion and cook over medium heat for 5 minutes. Add garlic and coriander, then cook for 1 minute more.

Thickly slice sausages and at to pan, cook until lightly brown. Add canned tomatoes, chickpea and blue pea sprouts. Simmer until sausages are cooked and the sauce has thickened. Adjust seasoning with salt and pepper, sprinkle with parsley to serve.Ā 


Easy budget meal for the whole family, no matter your food preference you can choose any kind of sausage. You can double the recipe for a larger family, good to freeze.
