Bread Rolls with Sprouted Broccoli


  • 200g Quark (Quark is¬†a traditional, creamy, vegetarian, fresh dairy product)
  • 2 eggs
  • 2.5 tbsp psyllium husks¬†
  • 1 tbsp chia Seeds
  • 1/2 tbsp sesame¬†seeds
  • 1/4 cup sunflower seeds
  • 1/2 tbsp baking Powder
  • Salt to season¬†
  • 1 cup broccoli sprouts


  1. In a bowl mix together Quark and eggs until combined. 
  2. Add in psyllium husks, chia, sesame, sunflower, baking powder and salt.
  3. In a mixer with a dough hook beat all ingredients until a thick dough forms. Add in the broccoli sprouts and mix until combined. 
  4. Cover and set aside for 20 minutes.
  5. Preheat oven to 180C fan forced. With a sharp knife cut the dough into 4 even portions. With wet hands shape each portion into a ball and place on a baking tray lined with baking paper. 
  6. Bake buns in the middle of your oven for 30 minutes and until golden brown. 
  7. Remove and leave to cool on a wire rack.
