BLUE PEA WITH FETA
- 1 packet Wright Sprouts Blue Pea sprouts
- 100gm Feta cheese
- 1 cup curly kale
- 6 cherry tomatoes
- 1 tsp dulse flakes (optional)
- 2 Tbsp. olive oil
- Salt to taste
Wash and shred the kale, this is a very fibrous vegetable and is digested better when shredded, add this to a bowl with the blue pea sprouts.
Cube the feta to the same size as the blue pea sprouts and add to the bowl, halve or quarter the cherry tomatoes depending on the size and add.
Add the dulse and salt to season and pour the olive oil over and fold through. Chill and serve.
This recipe is full of flavour that will come through as you chew, the kale and dulse will balance the feta and the blue peas are so fresh and crunchy.
Simple recipes are often the best, this is nice on a bed of rocket or baby spinach or just as it is. Enjoy.
