Blue Pea, chickpea Falafels
Ingredients:
- 400gm sprouted blue peas
- 400gm sprouted chickpea
- 200gm fresh mint chopped
- 200gm fresh coriander chopped
- 2tsp ground cumin
- 2tsp ground coriander
- Salt and pepper
Method:
Purée blue pea and chickpea in a food processor, adding a little water as you blitz the sprouts.
Add purée to a large mixing bowl.
Combine, chopped mint and coriander, ground cumin, coriander, salt and pepper to season.
Sprinkle flour to bind all together.
Make into to balls or small patties, place in a preheated oven 200 degrees in a well greased oven tray. Allow to brown turning as needed until they are crispy on the outside.
