Winter Fennel Salad
- 1/2 cup radish sprouts or Wright Sprouts Broccoli Mix Sprouts
- 1 fennel bulb
- 1 orange or tangelo
- orange zest
- Himalayan salt and ground black pepper to taste
- Fresh dill for garnish
Remove the core from the fennel and then thinly slice and put in a bowl. Retain any greenery that is on the top of the bulb for garnish. Zest about 1/2 tsp of the orange and add to the fennel, now peel the orange and chop in to small segments then add to fennel, now add the radish sprouts and mix through.
You don't need to dress this salad as the flavor of the orange acts as a dressing but you may wish to season with salt and pepper. Garnish with the fennel greens or fresh dill.
This salad has a fresh flavor with the fennel and orange combination and the bit of the radish.
This is the season for fennel and the citrus are just ripening making this an ideal winter salad to accompany a fish dish.
: Radish sprouts are very high in vitamin C, fennel also contains 12 mg of vitamin C per 100 gm and oranges also contain Vitamin C.
