Sprouted Lentil Tabouli
- 1 cup lentils sprouts See instructions below
- 1 cup chopped fresh parsley Chopped
- 2 medium tomatoes
- 2 sweet pickled gherkin
- 2 spring onions
- 1 green or yellow pepper
- 2 stalks of celery
- ¼ cup coriander chopped (optional)
- ¼ tsp cumin seeds (optional)
- Juice of a lemon (¼ cup)
Chop the gherkins into small cubes, chop tomato, celery, spring onions and green pepper into fine pieces. Place all chopped vegetables including the parsley and coriander with the lentil sprouts and mix.Sprinkle the cumin seeds and squeeze the lemon juice over the mixture and mix throughly.
NB: We have taken our Lentil sprouts off the market :-( but they are so easy to grow.
In a sprouting jar soak lentils overnight in enough water to cover, next day drain and rinse well, leave tilted on your bench to drain and sprout. Rinse and drain in the evening and leave over night tilted on your bench. Rinse and drain again and by the evening they will now be ready to make this delicious recipe.
