Spicy Mixed Sprout Soup
Ingredients:
- 800 gram can crushed tomatoes
- 2 carrots grated
- 3 cups vegetable stock
- 1 packet Wright Sprouts Crunchy Mix Sprouts
- ½ tsp chilli flakes
- 1 tsp grated fresh ginger
- 1/4 tsp ground cinnamon
- ¼ tsp yellow mustard seeds
- ¼ tsp turmeric
- ¼ tsp ground fenugreek
- ¼ tsp garam masala
- ½ cup chopped fresh coriander
- Poppadoms to serve
Method:
Combine tomatoes, stock and all spices in a large saucepan. Simmer covered for 10 mins, then add the crunchy mix sprouts, turn down the heat and very gently simmer uncovered a further 5 mins until the soup thickens slightly. Season to taste.
Stir coriander through.
Top soup with coriander sprigs and serve with poppadoms.
