Raw Fruit Compote with Muesli
- 4 Tbsp. Wright Sprouts Raw Energy Muesli
- 1/3 cup greek yoghurt
- 1/2 cup frozen mixed berries
- 1/2 cup frozen apricot halves
- 1 orange peeled, deseeded and chopped
- 2 tsp Agave nectar
- 1 Tbsp. water (If needed)
Put chopped orange, apricots halves and 1 tsp of agave nectar into the blender, blend until well blended, it's ok if it is still a bit pulpy, pour into the base of 2 serving dishes. This looks best in a glass to see the layers, I have used stemless wine glasses.
Put a layer of greek yoghurt on top of fruit.
Rinse your blender, put in the berries 1 tsp agave nectar, blend to a smooth thick compote, if needed add the water. Gently spoon this over the yoghurt.
Now gently spread 2 tablespoons of Wright Sprouts Raw Energy Muesli over the berry compote.
Makes 2 servings
Note: Can use canned apricots if frozen are unavailable but drain off juice. I blended the yoghurt with a small amount of milk to make it creamier.
Variation: Desert dish.
