Kale with Nuts and Feta
- large bunch washed and shredded Kale
- 1/2 carrot Julienned or grated
- 1 small beetroot Julienned or grated
- 2 spring onions finely sliced
- 1 green capsicum finely chopped
- 150 gm Feta cubed
- 1/4 cup pistachio nuts
- 1/4 cup Raw Energy Schmogle (Dried Pumpkin & Sunflower Sprouts)
- 3 Tbsp olive oil
- Juice of lemon
Combine all the salad ingredients into a bowl and toss to combine.
Mix the dressing in a separate container, then pour over salad and toss again.
This is ready to serve.
The pistachio and schmogle really make this a super dish, so don't leave these out.
