Chickpea , Blue Pea & Sausage Casserole


  • 1 bag Wright Sprouts Chickpeas
  • 1 bag Wright Sprouts Blue Peas
  • 1 Tbsp Olive Oil
  • 1 large red onion
  • 2 cloves garlic
  • 1 tsp ground coriander
  • 5 sausages 400g can chopped tomatoes
  • Salt & freshly ground black pepper
  • 3 tsp chopped parsley


Heat oil in large saucepan. Add onion and cook over a medium heat for 5 mins. Add garlic and coriander, then cook for one minute more. Thickly slice sausages and add to pan & lightly brown. Add canned tomatoes, Wright Sprouts Chickpeas and Wright Sprouts Blue Peas. Simmer until sausages are cooked and sauce thickened. Adjust seasoning with salt and pepper, sprinkle with parsley to serve. Easy budget meal (good to freeze) we double this recipe and freeze the other half for another day.
