Blue Pea Pesto


  • 1 bag Wright Sprouts Blue Pea sprouts
  • 1 clove garlic
  • 1 large spring onion
  • 1 Tbsp lemon juice 
  • 1/4 c grated parmesan cheese
  • 1/4 c olive oil
  • 1/2 tsp salt Dash of Tabasco or other chilli sauce


In food processor/blender, whiz together Wright Sprouts Blue Pea sprouts and the roughly chopped clove of garlic until very fine. Add roughly chopped spring onion to mixture and puree until smooth. Add lemon juice or vinegar, grated cheese and half the oil until mixture is smooth. Add remaining oil, salt and chilli to taste and puree again. Taste and adjust seasonings if desired. If mixture needs thinning add a little water, about a tbsp.
