Papaya Salad with Broccoli Sprouts

Ingredients:

  • 1 Green Papaya Julienned
  • 2 carrots Julienned
  • 2 crushed cloves garlic 
  • 2 cm nob of fresh ginger grated
  • 2 kaffir lime leaves thinly sliced
  • 2 kaffir limes juiced
  • Zest of Kaffir lime
  • 1 Bag Wright Sprouts Broccoli Mix Sprouts

Method:

Wash and julienne the carrots, peel the papaya and remove the seeds, now julienne this as well, place in a bowl with the carrots and mix through to combine.

Slice the kaffir lime leave very finely with a sharp knife and add to the bowl.

In a small bowl mix the grated ginger, garlic, kaffir zest and and juice. Pour this over the carrot and papaya and mix through, garnish with a generous amount of Broccoli Mix Sprouts.

You can mix the sprouts through the salad if you wish.

Served chilled.
