Kale with Nuts and Feta

Ingredients:

  • large bunch washed and shredded Kale
  • 1/2 carrot Julienned or grated
  • 1 small beetroot Julienned or grated
  • 2 spring onions finely sliced
  • 1 green capsicum finely chopped
  • 150 gm Feta cubed
  • 1/4 cup pistachio nuts
  • 1/4 cup Raw Energy Schmogle (Dried Pumpkin & Sunflower Sprouts)

Dressing:

  •  3 Tbsp olive oil
  • Juice of lemon

Method:

Combine all the salad ingredients into a bowl and toss to combine.

Mix the dressing in a separate container, then pour over salad and toss again.

This is ready to serve. 

The pistachio and schmogle really make this a super dish, so don't leave these out.
